Toasted Pumpkin Seed-Multigrain Porridge


This loaf probably has more steps than any loaf I make. The organic 6-grain flakes and whole grains (Rolled Wheat, Spelt, Kamut, Rye, Oats, and Barley) are soaked and fermented overnight and then cooked into a porridge, re-innoculated with starter, and hand-folded into to the dough with toasted sesame and pumpkin seeds. That’s why I often say the porridge loaves are “triple fermented.” The shaped dough is then rolled in more oats and seeds!
