It’s been another long while since I made this one! I’ve already roasted 10lbs of red peppers and 2lbs of garlic to concentrate their flavors. They’ll get sliced, chopped, and hand-folded into the dough along with the Parmesan, and a pesto that I’m making with fresh basil AND parsley, organic olive oil, and pumpkin seeds as a really interesting substitute for the pine nuts. After the shaping, the dough will be rolled in more Parmesan!
