This is a newer version of a Sweet Potato-Ghost Pepper I made back in February. I par-boiled the sweet potatoes and cubed them. After covering the cubes in organic olive oil and thyme, I then roasted half of them until some of the tips were caramelized. I’ll be combining all the sweet potatoes with a spicy ghost pepper cheddar and fresh cilantro, and then hand-folding all of that into the dough. I’m hoping for a nice balance between sweet, savory, and spicy!
