Working with the fresh ramps lately has inspired me to try all kinds of new combinations with olive oil and plants from the allium family (genus). For this loaf, I’m slicing scallions and chopping garlic, and then sautéing all those alliums in a wonderfully spicy Baklouti Green Chile Pepper-fused olive oil I got from Laurel Highlands Olive Oil. To that, I’m adding tarragon and basil herbs. The extra-flavorful oil should permeate the dough making the crumb softer and with a smaller hole structure.
