I started with the idea of using fresh beets and beet juice because I wanted a really colorful loaf, but then I thought that Pink Lady apples, carrots, cranberries, and currants would all go well together, too! The beets and the carrots are cut into matchstick-size pieces, whereas the apples are larger and also soaked in beet juice. You might be tempted to make a juice smoothie with this bread, but I’m thinking this will be even better as morning toast!
