The “Red Baran” is a lacto-fermented red cabbage loaf inspired by my friend and fellow baker, Rob Baran. This new version is made with green cabbage and jalapeño peppers that have been fermenting for twelve days! Because it’s made with green and not red cabbage, the color won’t be as vibrant, but the flavor is just as intense! And without the buffer of the fats in the cheese, the jalapeñso get to express their full spiciness!
