A couple hours before the dough is made, the organic wheat berries are fresh-milled by yours truly to keep as much of the wheat’s flavor and nutrition intact. 45% wholegrain gives this loaf a nicer crumb and mouth-feel. In this batch, I’m adding rye and spelt for extra flavor!
